  • Harvesting method: hand picked, within October 31.
  • Method of processing: within 6 hours of harvesting.
  • Olive mill: hammer grinding machine.
  • Processing methods: cold extracted, with continuous cycle and ultrasonic aid.
  • Variety: “Peranzana” 100%.
  • Colour: intense green with golden reflections.
  • Aroma: medium fruity, hints of fresh grass and unripe tomato.
  • Flavor: medium fruity, clean taste of olive with almond and artichoke aftertaste.
  • Acidità: maximum 0.20

The Peranzana is the representative cultivar of the territory in which our company is based.
The selection of the best fruits gathered exclusively from ancient trees in Torremaggiore, the early harvest to preserve the best organoleptic properties and the processing with the most innovative ultrasonic extraction techniques make this product the highest qualitative expression that we can offer in our extra virgin olive oil .
The olives are harvested and processed within 6 hours to obtain an excellent, fresh product.
